    Potatoes in White Sauce

    Serves: 8


    • 1kg new potatoes, peeled or scrubbed
    • 50g butter
    • 50g plain flour
    • 600ml milk
    • 1-2 teaspoons caster sugar
    • Freshly ground nutmeg, to taste


    1. Cook the potatoes in a large pan of salted water for about 15 minutes until tender. Drain.
    2. Meanwhile, make the white sauce. Melt the butter in a medium-sized pan, then add the flour and stir for a minute. Remove the pan from the heat and add the milk, stirring well. Return the pan to the heat and stir constantly until boiling.
    3. Simmer for 3-4 mins until thickened. Add the potatoes to the sauce, then add the sugar and nutmeg to taste. Season with more salt if necessary. Serve warm or cold.
