    Prune and Bitter Chocolate Tart

    Recipe from Ego Café Bar, Ludlow

    Makes: Makes 1x30cm tart


    • Filling
    • 225g pitted prunes, chopped
    • 225g best dark chocolate, chopped
    • 4 eggs
    • 110g soft brown sugar
    • 110g melted butter
    • Juice and zest of 2 lemons
    • Pastry
    • 350g plain flour
    • 225g unsalted butter
    • 110g caster sugar


    1. To make the pastry, rub the butter into the flour until the mixture resembles fine breadcrumbs, then stir in the caster sugar. Then press around the base and sides of a 30cm ceramic quiche dish. Bake in an oven preheated to 180°C/gas mark 4 until set - approx 12 minutes.
    2. Place the chopped prunes and chocolate into the tart case. Mix together the eggs, sugar, melted butter, lemon juice and zest. Pour into the tart case. Cook in the oven (at the same temperature) for 25 minutes. Allow to cool before slicing, but serve still slightly warm with fromage frais and a slice of orange.
