Purple-sprouting broccoli with chilli & lemon

Serves: 8
2 x 200g packs purple-sprouting broccoli
1 tbsp olive oil
2 red chillies, thinly sliced
Grated zest and juice of 1 lemon
1. Halve any large spears of broccoli lengthways then cook in a large pan of boiling, salted water for 3 minutes. Drain well.
2. Heat the olive oil in a large sauté pan or wok and, when the oil starts to smoke, add the chillies. Sizzle for a few seconds then add the broccoli and a pinch of salt. Cover with a lid and cook for 3 minutes, shaking the pan once or twice.
3. Lift the lid – the broccoli will be a little browned in places – and stir in the lemon zest and juice. Serve immediately.
Cook's tip Purple-sprouting broccoli can be replaced with Tenderstem broccoli or even small florets of cauliflower, if preferred.
