    Quail's Egg Salad

    Serves: 4


    • 12 slices from a small baguette
    • Olive oil
    • 12 quail's eggs
    • 110g bag salad leaves
    • 2 tbsp French dressing
    • Salt
    • Freshly ground black pepper


    1. Preheat the oven to 190°C/gas 5. Drizzle the baguette slices with oil. Bake for 8-10 minutes until golden. Dress the salad. Arrange the baguette slices and salad on four plates. Heat a non-stick pan over a medium-low heat.
    2. Break in the eggs. Cook until the whites are set but the yolks still soft. Add to the plates, season, and serve.
