    Quick Chicken Pilaff

    Using precooked rice that's already been mixed with garlic and coriander gives this simple chicken dish instant flavour.

    Serves: 4


    • 2 tbsp olive oil
    • 1 onion, peeled and finely chopped
    • 2 red peppers, deseeded and chopped
    • 500g Waitrose Fresh Chicken Breast Fillets, cut into cubes
    • 4 tomatoes, chopped
    • 2 x 250g sachets Patak's Garlic and Coriander Rice
    • Salt
    • Freshly ground black pepper


    1. Heat the oil in a large wide pan, add the onion and red peppers and fry for 5 minutes, until softened. Remove from the pan and set aside.
    2. Add half the chicken and fry for about 10 minutes, stirring frequently, until lightly coloured. Keep warm while frying the remaining chicken.
    3. Return all the chicken with the peppers and onion to the pan, and stir in the tomatoes and rice. Cook, stirring regularly, over a gentle heat for 3-4 minutes, or until the chicken is thoroughly cooked and there is no pink meat. Season and serve at once.

    Cook's tips

    To make this dish suitable for vegetarians, replace the chicken with a 250g pack Waitrose Vegetarian Organic Tofu Soya Bean Curd, cubed, and 100g sliced mushrooms. Add in step 1 above, and cook for 5 minutes before adding the tomatoes and rice as above.
