    Quick Pasta with Creamy Rocket Pesto

    Here is a speedy but stylish supper for tonight that is ready in 10 minutes. We have used Cheese, Tomato and Basil Medaglioni, but you can use any fresh-filled pastas. Serve with Tomato and Garlic Flatbread. (Found in the chiller cabinet with the pastas.) The rocket dressing is also delicious drizzled over new potatoes.

    Serves: 2

    Ingredients

    • Zest of 1 unwaxed lemon, pared in long thin strips, plus 1 tbsp lemon juice
    • 250g pack Waitrose Cheese, Tomato and Basil Medaglioni
    • 50g bag Waitrose Rocket
    • 1 salad onion, roughly chopped (optional)
    • 2 tbsp half fat crème fraîche
    • 25g Parmigiano Reggiano, grated
    • 2 tbsp extra virgin olive oil

    Method

    1. Fill a large pan with water, add the lemon zest and bring to the boil over a high heat. Add the pasta and cook according to the pack instructions. Drain, reserving the lemon zest for the garnish.
    2. Meanwhile, place most of the rocket in a food processor or liquidiser with the remaining ingredients, reserving a little rocket to garnish, and process until smooth. Season to taste.
    3. Drizzle the pasta with the rocket pesto and serve immediately topped with the reserved rocket and lemon zest strips, and some freshly ground black pepper.
    4. Serve with a fresh tomato salad and some warm Tomato and Garlic Flatbread.

    Cook's tips

    Cooking the lemon zest with the pasta softens it and makes it less bitter.
