Raspberry and Chilli Vinegar

This is a real lip-smacking, thick, fruity vinegar and a far cry from the very acidic mass-produced stuff. It makes the most amazing dressing for peppery salad leaves to accompany a shredded crispy duck salad. The chilli flakes add a little extra kick, but the vinegar is equally irresistible without them.
