    Raspberry Mint Iced Tea

    In the summer, I place bowls of freshly picked berries on the kitchen counter. The children love tasting the different varieties. There's always a glut of berries, so this iced tea is a useful, delicious way of using them up.

    • Preparation time: 20 minutes, plus 1 hour cooling
    • Total time: 20 minutes, plus 1 hour cooling 60 minutes 20 minutes

    Serves: 8


    • 1kg Organic raspberries
    • 150g Granulated sugar
    • 3 Mint sprigs, chopped
    • 1 pinch Bicarbonate of soda
    • 2 Tea bags (any black tea)
    • 1 Organic lemon, sliced


    1. First, crush the raspberries and sugar in a bowl. Then add the chopped mint and bicarbonate of soda. Set aside. Pour 1 litre boiling water over the tea bags and leave to steep for 4–5 minutes. Remove the tea bags and discard. Pour the tea over the crushed raspberries.
    2. Stir and allow to cool for 1 hour. Strain the mixture through a muslin-lined sieve and add 600ml cold water. Serve over ice with the lemon slices.
