    Ratatouille baked potatoes

    • Total time: 30 minutes

    Serves: 2


    2 large baking potatoes
    375g can essential Waitrose Ratatouille Provencale
    50g essential Waitrose Cheddar Cheese, grated
    100g bag essential Waitrose Mixed Salad


    1. Preheat the oven to 200ºC, gas mark 6. Prick the potatoes with a fork and microwave them on high power for 7-8 minutes. Transfer to the oven and bake for 20 minutes.

    2. Cut the potatoes in half and scoop out the flesh, leaving a 1cm border round the sides. Place the shells in a small heatproof serving dish.

    3. Heat the ratatouille and spoon into the potato shells, sprinkle with cheese and place under a preheated grill for 1-2 minutes until golden.

    4. Serve with the salad and mashed potato on the side.
