    Red Onion and Orange Sauce

    Serves: 4


    • 1 red onion, chopped
    • 300ml tub Joubère Fresh Chicken Stock
    • 50ml freshly squeezed orange juice
    • Knob of butter, chilled


    1. Put the onion, stock, orange juice and any meat juices from roasting the turkey into a saucepan. Season and bring to the boil. Leave to bubble and thicken slightly for 8-10 minutes.
    2. Just before serving, whisk in the butter. Stir well and strain into a warmed sauce boat.
