    Red Wine Compote

    Serves: 4


    • 85g sugar
    • 350ml full-bodied red wine
    • 1 small bunch of mint
    • 1 small punnet of raspberries
    • 1 small punnet of blackberries
    • 1 small punnet of blueberries
    • 1 small punnet of redcurrants
    • 1 small punnet of strawberries


    1. Add the sugar to the red wine and boil to reduce by one third. Roughly chop half of the mint and add to the mixture, re-boil and strain into a bowl.
    2. Add the raspberries, blackberries, blueberries and redcurrants and leave to marinate for at least half an hour.
    3. Allow the fruit mixture to cool, hull and halve the strawberries, and add to the other fruit.
    4. Divide the mixture between 4 bowls, cut the remaining mint leaves into fine strips and sprinkle them over the top.
