    Rhubarb and Ginger Fool

    Although technically a vegetable, rhubarb is used as a fruit and its tart flavour is perfect for crumbles, pies and fools. It is very quick to prepare and cook, making it one of nature's healthiest fast foods.

    Serves: 4


    • 450g rhubarb
    • 1 tbsp water
    • 1 tsp ground ginger
    • 85g waitrose soft light brown muscovado sugar
    • 225ml custard
    • Waitrose continental plain chocolate, to serve


    1. Trim 450g rhubarb into short lengths and place in a saucepan with 1tbsp water, 1tsp ground ginger and 85g Waitrose Soft Light Brown Muscovado Sugar. Bring to simmering point and cook gently for 10 - 15 minutes until the fruit is soft.
    2. Allow it to cool and when almost cold, liquidise with 225ml custard. Chill and serve in glasses decorated with grated curls of Waitrose Continental Plain Chocolate, or pieces of rhubarb lightly poached.
