    Roast Lamb with Potatoes and Herbs

    A delicious sage-and-rosemary-scented roast graces tables all over Tuscany at times of celebration; but, of course, a roast is a great family dish at any time.

    • Preparation time: 20 minutes, plus overnight infusion
    • Cooking time: 1 hour 5 minutes, plus resting
    • Total time: 1 hour 25 minutes, plus resting 60 minutes 25 minutes

    Serves: 6 - 8


    • 2 x 800g legs of boned lamb
    • 1.2kg small new potatoes, washed and scrubbed
    • 250ml white wine
    • Herb Oil
    • 30g Rosemary sprigs
    • 25g sage sprigs
    • 1 garlic clove
    • 150ml extra virgin olive oil


    1. For the herb oil, strip the leaves off the rosemary and sage sprigs and chop along with the garlic. Add to the oil, stir, and leave to infuse overnight.
    2. Preheat the oven to 200°C/gas 6 and put a large roasting tin in it. Trim the fat off the lamb legs and lay them open. Season inside and out. Put 4 tbsp herb oil on the inside of each leg. Roll both up and tie with string, then drizzle the outside with the remaining herb oil. Put into the preheated tin and into the oven. Turn the lamb every 5 minutes for the first 15 minutes in order to brown the meat on all sides.
    3. If the potatoes are small, leave them whole; if not, cut them into chunks leaving the skins on. Add the wine and potatoes to the roasting tin, stir to coat in oil and continue cooking for another 50 minutes, or until the lamb is browned and just cooked. The potatoes should be golden, crisp and soft inside. Turn the lamb and potatoes over once or twice.
    4. Transfer the lamb to a board, leaving the potatoes in the oven. Cover the lamb with foil and rest for 10 minutes, then remove the string and cut the lamb into slices. Remove the potatoes from the oven and season them with salt to taste. Serve immediately.
