    Roasted Butternut Squash with Garlic and Beans

    Sweet, sticky and melting butternut squash is a vegetable that you really shouldn't miss. In this recipe, garlic gives the dish a bit of a kick and the green beans and almonds add a satisfying crunchy texture.

    • 3 medium butternut squash (about 3kg), peeled, deseeded and cut into chunks
    • 4 tbsp olive oil
    • 4 cloves garlic, peeled and finely sliced
    • 450g pack Waitrose Green Beans, trimmed
    • 25g toasted flaked almonds
    • Salt and freshly ground black pepper


    1. Preheat the oven to 180ºC, gas mark 4. Place the squash on a baking tray and pour over the oil. Roast for 30 minutes.
    2. Add the garlic and return to the oven for a further 5 minutes, or until the squash is tender and the garlic is translucent.
    3. Meanwhile, bring a pan of water to the boil and add the green beans. Cook for 3-4 minutes until tender, then drain and rinse the beans under cold water; this helps them retain their colour.
    4. Add the beans to the baking tray with the almonds, toss together and season to taste. Serve with the beef.
