    Roasted ham with orchard fruit relish

    You’ll need plenty of time to jerk the ham before serving with the relish.

    Serves: 8


    • 1 smoked gammon joint, approximately 1.5kg
    • Jerk mix
    • 5 bay leaves, chopped
    • ½ tsp ground nutmeg
    • 1 tsp ground cinnamon
    • 1 tsp ground ginger
    • 1 dried red chilli
    • 1 tsp cumin seeds
    • 1 tsp coriander seeds
    • 2 cloves
    • 1 tbsp honey
    • 2 garlic cloves
    • Orchard fruit relish
    • 1 tbsp olive oil
    • 1 onion, sliced
    • 2 apples, peeled, thinly sliced
    • 2 pears, peeled, thinly sliced
    • 30g sultanas
    • ½ tsp ground ginger
    • ¼ tsp ground cinnamon
    • ¼ tsp ground coriander
    • ¼ tsp ground cumin
    • 2 tbsp cider vinegar
    • 1 tbsp honey
    • 1 drop vanilla extract
    • Stock
    • 1 onion, peeled, quartered
    • 1 leek, cut into 3 pieces
    • 1 carrot, halved
    • 2 celery sticks, halved
    • 2 bay leaves
    • 1 cinnamon stick
    • 1 orange, studded with 15 cloves
    • 1 tsp peppercorns
    • 500ml real ale
    • 250ml apple juice
    • 150ml cider vinegar


    1. Place the gammon in a pan with the ingredients for the stock, then add enough cold water to submerge the meat. Bring to the boil over a high heat, skim off any scum, then simmer it gently for 1 hour 20 minutes.
    2. Meanwhile, pound the ingredients for the jerk mix in a pestle and mortar.
    3. Preheat the oven to 180c, gas mark 5. Lift the meat from the pan and peel off the skin, but leave the fat on. Place the ham in a roasting tin, brush with the jerk mix and roast for 30 minutes till golden and cooked through.
    4. For the relish, heat the oil in a pan over a low heat and sweat the onion for 8 minutes. Add the fruit, sultanas and spices and cook for a further 2 minutes, then add a splash of water and cook for 20 minutes until the fruit is soft but holds its shape. Add the vinegar and simmer for 1 minute, then mix in the honey and vanilla.
    5. Let the meat cool; serve sliced in sandwiches with the relish.
