    Roasted Nectarines with Ginger and Brown Sugar

    Serves: 6


    • 6 nectarines, halved and stoned
    • 2.5cm cube of ginger, peeled and grated
    • 175g soft dark brown sugar
    • Juice of 1 lime


    1. Preheat the oven to 190°C, gas mark 5. Put the nectarines in a bowl with the ginger, sugar and lime juice. Mix together to coat the nectarines, then place cut-side up in an ovenproof dish where the nectarines can lie in a single layer.
    2. Pour 75ml cold water around the fruit and bake for 30-40 minutes. (How long it takes depends on how ripe your fruit is – ripe fruit cook faster, hard fruit can take up to 60 minutes.) If the nectarines look pale, sprinkle over more sugar in the last 10 minutes of cooking. Serve chilled or at room temperature, with crème fraîche or ice cream.
