    Roasted Royals

    Grown in the Channel Islands since 1880, Jersey Royals are easily identified by their long, oval shape and delicate skins. The flesh is yellow with a slightly waxy texture so the potatoes retain their shape when boiled and can be served hot or cold. These sweet earthy potatoes are available from spring through to early summer. To enjoy them at their best, only buy as you need them and store for a short period in a dry dark cupboard.

    Ingredients

    • 450g Jersey Royal New Potatoes
    • 2tbsp olive oil
    • 1tbsp dry white wine
    • 1 clove garlic
    • 1tbsp fresh rosemary

    Method

    1. Scrub 450g Jersey Royal potatoes, halving any large ones. Mix together 2tbsp olive oil, 1tbsp dry white wine, 1 clove garlic, crushed, and 1tbsp fresh rosemary, roughly chopped. Combine with the potatoes until evenly coated then roast in a preheated oven 200ºC, gas mark 6, for 40-45 minutes, turning once.
    2. Serve immediately.
