    Roasted Salmon and Lemon Pasta

    • 1 essential Waitrose Lemon
    • 260g pack Waitrose Lighlty Smoked Salmon Fillets (with the pre-packed fresh fish)
    • 200g essential Waitrose Dried Tagliatelle
    • 75ml soured cream
    • 1 ½ tsp Waitrose Cook's Ingredients Nonpareille Capers in Brine, drained and roughly chopped


    1. Preheat the oven to 220˚C, gas mark 7 and bring a large pan of water to the boil. Finely grate the zest from the lemon and set aside. Cut the lemon into 6 slices, discarding the ends.
    2. Place the lemon slices next to each other in a single layer on a baking sheet. Top with the salmon and place in the oven. Cook for 10 minutes, or until just opaque.
    3. Cook the pasta according to the instructions on the pack. Drain and return to the pan. Add the sour cream, capers and half of the lemon zest.
    4. Flake the salmon into the pasta in large chunks and fold in gently. Serve in warmed bowls with the reserved lemon zest and freshly ground black pepper sprinkled over the top. Serve with extra lemon wedges.
