    Roasted Spiced Cauliflower

    Spicy and warming

    Serves: 4 as a side dish


    • 1 large cauliflower
    • 2 tbsp olive oil
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 2 tbsp fresh chopped coriander
    • Solo sea salt
    • Pepper


    1. Cut a large cauliflower into florets and boil for 4 minutes, then drain well. Mix together 2 tbsp olive oil, 1 tsp each ground cumin and coriander and 2 tbsp chopped fresh coriander.
    2. Season with Solo Sea Salt and pepper then tip the cauliflower into a small roasting tin and drizzle with the oil mixture. Toss well to coat, then roast at 200°C, gas mark 6, for 15-20 minutes, until tinged brown.

    If you are serving this as part of a roast lunch, then the cauliflower can be prepared ready for roasting up to two hours ahead.
