    Sardine, black olive and cherry tomato pasta

    Quick and easy. Different textures and flavours.

    • Preparation time: 10 minutes
    • Cooking time: 8 minutes
    • Total time: 18 minutes 20 minutes

    Serves: 2


    • 1 small essential Waitrose Red Onion, finely sliced
    • 150g essential Waitrose Farfalle dried pasta
    • ½ x 270g pack Waitrose Cherry Vine Tomatoes, halved
    • 50g Waitrose Whole Black Natural Olives
    • 120g can Waitrose Sardine Piccanti
    • Juice of ½ lemon
    • 20g pack flat-leaf parsley, chopped


    1. Cook the pasta in boiling water for 8 minutes until tender. Meanwhile, place the onion, tomatoes and olives in a bowl. In a separate bowl, drain the oil from the sardines and whisk with the lemon juice to make a dressing.
    2. Break the sardines into pieces and add to the tomato mixture along with the drained pasta. Pour the dressing over and stir through the salad, adding in the parsley. Serve immediately

    Use canned tuna as an alternative to the sardines.
