    Sausage, pea and potato casserole

    Hearty supper

    • Total time: 1 hour 5 minutes 5 minutes

    Serves: 4


    • 1 tbsp olive oil
    • 2 cloves garlic, crushed
    • 2 essential Waitrose Onions, sliced
    • 454g pack Waitrose 8 Free Range Hampshire Breed Pork Sausages
    • 227g can essential Waitrose Chopped Tomatoes
    • 200 ml chicken stock
    • 200 ml dry white wine
    • 1 tbsp Worcestershire sauce
    • 500 g baby new potatoes, halved
    • 300g frozen essential Waitrose Garden Peas


    1. Preheat the oven to 200°C, gas mark 6. Heat the oil in a frying pan and cook the garlic and onions over a low heat for 5 minutes until softened and lightly browned. Twist each sausage in the middle and cut in half to make 2 small sausages, add to the pan and brown them on all sides.
    2. Add the tomatoes, stock, white wine, Worcestershire sauce, potatoes and seasoning and bring to the boil. Transfer to a large casserole dish. Cover and bake in the oven for 50 minutes.
    3. Five minutes before serving, stir the peas into the dish, cover and return to the oven for 5 minutes. Check seasoning and serve.
