    Sausage Saltimbocca Sandwiches

    Resolutions are all very well but there’s always room for a sausage sarnie. Pep one up Italian-style with ham and sage – the best way to turn over a new leaf

    • 1 garlic clove, peeled
    • 2 ciabatta rolls
    • 150 ml dry white wine
    • 35 g butter
    • 2 tbsp olive oil
    • 2 tbsp plain flour
    • 4 pork sausages
    • 7 sage leaves
    • 4 slices Parma ham


    1. Lay out a slice of Parma ham, with the smallest end closest to you. Sit a sage leaf on this edge with a sausage on top. Roll up, wrapping the sausage and sage in the ham. Make three more parcels in the same way; lightly coat them in flour, brushing off the excess.
    2. Heat the olive oil and 25g butter in a frying pan over a low heat, add the remaining 3 sage leaves and fry the sausage parcels for 10–15 minutes, until golden brown. Pour in the wine and bubble gently for another 10 minutes, until the sausages are cooked and the sauce is thick and syrupy. Add the remaining butter and swirl the pan until it has melted. Remove from the heat.
    3. Meanwhile, split open the ciabatta rolls and grill until lightly charred. Rub the garlic over the bottom half of the rolls, then top with the sausages. Spoon over a little sauce, then top with the remaining ciabatta halves.
