Seared steak salad with sweet and sour dressing

Serves: 4
240g sirloin steak
½ tbsp olive oil
2 garlic cloves, finely grated
2 tsp grated fresh root ginger
1 tbsp light brown soft sugar
1 lime, juice
2 tsp toasted sesame oil
2 tbsp tamari
160g pack Waitrose beetroot salad
1 carrot, shredded
1 romano pepper, thinly sliced
Heat a frying pan over a medium-high heat. Trim the steak and brush with the oil. Season and fry for 2-3 minutes on each side for medium rare. Set aside to rest for 10 minutes. Meanwhile, for the dressing, mix together the garlic, ginger, sugar, lime juice, sesame oil and tamari. Toss the beetroot salad, carrot and pepper with ½ the dressing; arrange on a platter. Slice the steak and arrange on top of the salad, spooning over more dressing.
