    Shrimp Cakes

    This is based on a Spanish recipe, tortillitas de camarones. It's a dish that was cooked by the same Spanish Romany that created flamenco.

    • Preparation time: 10 minutes, plus 30 minutes resting
    • Cooking time: 8 minutes
    • Total time: 48 minutes 50 minutes

    Serves: 4 as a starter


    • 50g plain flour
    • 2 medium eggs
    • 1 bunch salad onions, finely chopped
    • 2 tbsp flat leaf parsley, finely chopped
    • 225g small prawns, shelled
    • 1 tsp paprika
    • 2 tbsp olive oil
    • lemon wedges


    1. Lightly whisk the flour and eggs. Add 5 tbsp water, stir to a smooth batter and add the onions, parsley, prawns and paprika. Season and leave to rest for 30 minutes.
    2. Heat the oil in a heavy-based pan over a medium heat. Spoon in 1 tbsp of the mixture and flatten slightly; cook for about 2 minutes each side, until golden. Cook in batches of 4. Serve with lemon wedges and salad.
