    Sicilian Stuffed Peppers

    • Preparation time: 15 minutes, plus soaking
    • Cooking time: 60 minutes
    • Total time: 1 hour 15 minutes, plus soaking 60 minutes 15 minutes

    Serves: 6


    • 75g raisins
    • 150g fresh white breadcrumbs
    • 75g toasted pine nuts
    • 3 tbsp capers, rinsed
    • 50g pitted black olives, rinsed and chopped
    • ½ 20g pack fresh parsley, roughly chopped
    • ½ 20g pack fresh mint leaves, roughly chopped
    • 50ml olive oil, plus extra for drizzling
    • 6 red peppers, halved and deseeded


    1. Preheat the oven to 180°C, gas mark 4. Soak the raisins in boiling water for 5-10 minutes, then drain. Mix together all of the ingredients except the peppers. Taste before seasoning – even though the stuffing is still raw, you need to get an idea of how much salt to add (if any).
    2. Put the pepper halves into an ovenproof dish and spoon the stuffing into them. Drizzle a little more olive oil over the top and bake in the oven for 1 hour. Serve hot or at room temperature with a rocket salad.
