Simple seafood soup

The paprika in this recipe makes it a vibrant, satisfying dish with a sunny, Mediterranean flavour. It can be enjoyed as a starter for six or as a filling main for four.
Serves: 4
1 tsp olive oil
1 celery stalk, diced
2 cloves garlic, chopped
1 x 23g Knorr Paprika Flavour Pot
1.2 litres vegetable stock
400g essential Waitrose Cannellini Beans, drained
400g pack Waitrose Frozen Fruits De Mer
Finely grated zest and juice of 1 orange
2 tbsp fresh parsley, chopped
Crusty bread, to serve
1. Heat the oil in a large saucepan and cook the celery and garlic
for 3–4 minutes until softened. Add the Flavour Pot and vegetable stock and bring to the boil.
2. Stir in the cannellini beans and frozen seafood mix and cook for
8 minutes until cooked through and piping hot.
3. Stir in the orange zest and juice and ladle the soup into wide bowls. Scatter with parsley and serve with crusty bread.
Cook’s tips
For a fish soup, try swapping the seafood for Waitrose Frozen Firm & Flaky Fish Pie Mix. For a warmer, sweeter flavour, add some diced chorizo with the celery and garlic at the beginning.
