Simple steak fajitas with avocado salsa

    • Preparation time: 15 minutes
    • Cooking time: 30 minutes
    • Total time: 45 minutes

    Serves: 4

340g pack essential Waitrose British Beef Frying Steak, cut into 2cm-wide strips
    2 cloves garlic, finely chopped
    1 tsp dried oregano
    Juice of 2 limes
    2 tbsp olive oil
    2 ripe avocados
1 Waitrose Classic Vine Tomato, finely chopped
1 red chilli, seeded and diced
    2 tbsp chopped chives
2 Waitrose Red Romano Peppers, seeded and cut into 10cm-long strips
    4 flour tortillas
Soured cream and grated Gruyère to serve

    1. Place the steak, garlic, oregano, half the lime juice and 1 tbsp olive oil in a large bowl and toss well together. Leave to marinate for 10 minutes.

    2. Meanwhile, skin, stone and finely dice the avocados. Mix with the remaining lime juice and olive oil, the tomato, chilli and chives, then set aside.

    3. Heat a large frying pan and stir-fry the steak and peppers over a high heat for 5 minutes until the peppers are tender and the steak is nicely browned. Tip into a large serving bowl.

    4. Wipe out the pan with kitchen paper and briefly warm the tortillas. Plate the steak and peppers, salsa and tortillas on separate serving dishes. Serve with the soured cream and grated cheese, and invite everyone to fill and roll their own tortillas.
