    Slow-roasted tomatoes

    • Preparation time: 5 minutes
    • Cooking time: 4-6 hours
    • Total time: 4-6 hours

    Makes: about 350g


    3 x 300g pack Waitrose 1 Red Choice Tomatoes
    About 1 tsp fl aky sea salt
    About 1 tsp chilli flakes
    About 2 tbsp extra virgin olive oil, plus extra for jarring  


    1. Preheat the oven to 110˚C, gas mark ¼. Halve the tomatoes widthways and arrange on a parchment-lined baking tray. Sprinkle each tomato with sea salt and chilli flakes, then drizzle with the olive oil. Roast for 4-6 hours, checking regularly, until shrunken and deep red. Leave to cool and store in a clean, airtight container in the fridge, covered with more olive oil to preserve them,
    for up to 5 days.
