    Smoked Chicken and Watermelon Salad

    This salad is quick to prepare and packed full of all the wonderful fresh summer flavours of broad beans, watercress and watermelon.

    • Preparation time: 10 minutes
    • Cooking time: 5 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 6


    • 100g broad beans, double podded
    • 750g smoked chicken or roast chicken, bones removed and meat sliced
    • 1kg watermelon (about ½ small watermelon), peel removed and thinly sliced
    • 1 bunch organic watercress, washed and trimmed
    • 25g toasted pine nuts
    • juice of 1 lemon
    • 2 tbsp extra virgin olive oil


    1. Cook the broad beans in a pan of boiling water for 3-4 minutes until they rise to the surface and are tender. Drain and refresh under cold water.
    2. Combine the chicken with the watermelon and watercress in a large container or bowl. Scatter over the broad beans and pine nuts. Mix the lemon juice and olive oil together and season well. Place in a separate container and drizzle over the salad just before serving.
