    Southern-Style Bourbon Ribs and Wings

    A good dash of Bourbon gives these lip-smacking family favourites a grown-up twist.

    • Preparation time: 10 miutes, plus marinating
    • Cooking time: 20 minutes to 25 minutes
    • Total time: 30-35 minutes, plus marinating 35 minutes

    Serves: 4


    • 8 British organic chicken wings
    • 8 pork spare ribs
    • 3 tbsp tomato purée
    • 3 tbsp Worcestershire sauce
    • 2 tbsp clear honey
    • 3 tbsp Bourbon whiskey
    • 1-2 drops Tabasco, or to taste


    1. Thread the wings onto metal skewers and place with the ribs in a large, shallow dish.
    2. Mix all the remaining ingredients in a bowl and season well. Pour the mixture over the meat and mix to coat all the pieces evenly. Cover and place in the fridge for at least 1 hour or for up to 12 hours.
    3. Prepare and light the barbecue or preheat the grill to high. Cook the ribs and wings for 20-25 minutes, turning them frequently so that they don’t burn. Serve immediately.
