    Southern Style Spicy Chicken

    This recipe makes a great addition to any bonfire or Thanksgiving party as it appeals to both adults and children. You can be sure of the quality of Waitrose Fresh Free Range Chickens which are reared on selected farms in the UK. The birds have unlimited daytime access to pastures and are fed on a cereal-based diet, free from routine veterinary preparations. This more traditional husbandry method results in meat which is both succulent and full of flavour.

    • Cooking time: 35 minutes to 40 minutes
    • Total time: 55 minutes to 1 hour 60 minutes

    Serves: 4


    • 100g fresh white breadcrumbs
    • 2 tbsp chopped fresh thyme
    • 2 tbsp chopped fresh parsley
    • ½ tsp cayenne pepper
    • 1 tsp paprika
    • Salt and freshly ground black pepper
    • 1 pack Waitrose Fresh British Free Range Chicken (4 drumsticks and 4 thighs)
    • 4 tbsp plain seasoned flour
    • 2 medium eggs, beaten
    • 3 tbsp olive oil


    1. Preheat the oven to 200°C, gas mark 6. In a flat dish, mix together the breadcrumbs, herbs, spices and seasoning.
    2. Coat the chicken portions in the seasoned flour, then dip in the beaten egg, coat thoroughly with the breadcrumb mixture and place on a baking sheet.
    3. Drizzle with the oil and bake in the oven for 35-40 minutes, turning once, until the crumb is crisp, the chicken is cooked thoroughly, there is no pink meat and the juices run clear. Serve with Waitrose Ready To Cook Rosemary and Garlic Potatoes, Gourmet Ruby Salad and Waitrose Soured Cream and Chive Dip.

    Cook's tips

    Make a quick dip to serve with the chicken by mixing together 100ml crème fraîche, 2 tbsp chopped fresh chives, 1 clove garlic, crushed, and freshly ground black pepper. Wash hands, equipment and work surfaces after handling raw meat.
