    Spaghetti with caramelised onion, cauliflower and pinenuts

    A proper treat with fresh pasta.

    Serves: 2


    • 1 tbsp olive oil
    • 2 essential Waitrose Onions, thinly sliced
    • 1 tsp caster sugar
    • 1 tsp balsamic vinegar
    • 25g pine nuts
    • 300g cauliflower, broken into florets
    • 250g essential Waitrose Fresh Spaghetti
    • ½ x 20g pack flat leafed parsley, chopped


    1. Heat the oil in a frying pan, add the onions and cook over a gentle heat for 15 minutes until really soft and golden, stirring regularly. Stir in the sugar, vinegar and pine nuts and cook for a minute longer.
    2. Meanwhile, cook the cauliflower in a pan of boiling salted water for 3–4 minutes until just tender. Drain thoroughly and refresh under cold water. Cook the pasta for 3–4 minutes until tender. Drain.
    3. Add the cauliflower to the onions and season. Toss with the drained pasta and parsley. Check seasoning and serve.

    Add a chopped fresh red chilli to the cooking onions for a more fiery flavour.
