    Speedy pasta with prawns, lemon and mint

    Serves: 4


    • 350g Waitrose wholewheat penne
    • 1 tbsp olive oil
    • 15g unsalted butter
    • 1 garlic clove, finely sliced
    • 300g Waitrose frozen raw king prawns
    • ½ lemon, zest and juice
    • 3 tbsp Waitrose half fat crème fraîche
    • 12 large mint leaves, finely shredded


    1. Bring a large pan of water to the boil and cook the pasta according to the packet instructions.
    2. Meanwhile, warm the oil and butter in a frying pan. Sauté the garlic and frozen prawns for a few minutes until the prawns are opaque and thoroughly cooked; remove from the heat. Strain the pasta, reserving 100ml cooking water.
    3. Return the frying pan to the heat. Add the cooking water, lemon zest and juice. Bring to a simmer, stir in the crème fraîche, mint and some black pepper. Toss the pasta in the sauce; serve immediately.
