    Spiced Baked Apple with Mint Creme Fraiche

    Guest Chef Gordon Ramsay - If you want to make this pudding ahead of time, you can poach the apples in the syrup the day before, but don’t combine the mint with the crème fraîche more than a couple of hours before you serve it.

    • 250g Granulated sugar
    • 2 Cinnamon sticks
    • 3 Star anise
    • 4 Large dessert apples
    • 200ml Crème fraîche or clotted cream
    • 15g Mint leaves, shredded, plus a few extra sprigs to garnish


    1. Dissolve the sugar in 350ml water in a heavy-based pan over a low heat. Once the sugar has dissolved, increase the heat and boil for 5 minutes. Reduce the sugar syrup to a gentle simmer and add the cinnamon sticks and star anise. Simmer until the syrup turns golden, then remove from the heat.
    2. Preheat the oven to 180C/gas 4. Peel, core and halve the apples. Place them in a medium baking dish and pour the infused sugar syrup over. Cover with foil, then bake for 35–45 minutes, basting the apples with the sugar syrup a couple of times, until the apples are tender but still hold their shape.
    3. Mix the crème fraîche or clotted cream with the mint and chill until you are ready to serve.
    4. Remove the baking dish from the oven and uncover. Lift out the apples and place them on a chopping board. Cut in half again, then thinly slice each quarter
    5. Overlap the apple slices on serving plates in a circle then glaze with some of the sugar syrup. Serve with a dollop of the minted crème fraîche and finish with a mint sprig.
