    Spiced chicken koftas with crunchy salad

    2 cloves garlic, roughly chopped
    2cm piece root ginger, roughly chopped
    1 red chilli, deseeded and roughly chopped
    400g pack essential Waitrose British Chicken Breast Chunks
    2 tsp garam masala
    200g Waitrose Ruby Coleslaw Mix or Crisp & Crunchy Coleslaw Mix
    1 cucumber portion, halved, deseeded and sliced
    150g Alpro Simply Plain
    1 tsp cumin seeds
    ½ x 25g pack fresh mint, roughly chopped
    4 small baked potatoes, to serve


    1. Place the garlic, ginger and chilli in a food processor and whizz until finely chopped. Add the chicken and garam masala and pulse until finely minced.

    2. Dampen your hands and shape the mixture into 12 ovals. Thread onto 4 skewers and cook under a preheated grill for 8–10 minutes, turning regularly until nicely browned and completely cooked through with no pink meat.

    3. Stir together the coleslaw mix, cucumber, Alpro Simply Plain, cumin seeds and mint. Serve with the koftas and baked potatoes.

    Cook’s tip

    Try serving the koftas and salad rolled up in flour tortillas.
