    Spiced Prawn and Rocket Pasta Salad

    • Preparation time: 30 minutes, plus cooling
    • Total time: 30 minutes, plus cooling 30 minutes

    Serves: 4 - 6


    • 300g orecchiette pasta
    • 1 small red onion, finely diced
    • ½ red chilli (or to taste), finely diced
    • 3 tbsp white wine vinegar
    • 9 tbsp extra virgin olive oil
    • Salt
    • Freshly ground black pepper
    • 350g cooked and peeled North Atlantic prawns
    • 130g wild rocket or a mixture of rocket and mizuna


    1. Cook the pasta according to packet instructions. Be sure to add a spoonful of vegetable or olive oil to the water as this helps to prevent the pasta sticking. Stir regularly.
    2. Meanwhile, put the diced red onion and chilli in a large bowl. If you like your food hot, include the chilli seeds. Whisk in the vinegar and olive oil and season to taste.
    3. Drain the pasta and run it briefly under the cold tap until it is warm, as opposed to hot. Shake well and tip into the large bowl with the chilli and onion. Mix well until it is thoroughly coated in the vinaigrette. Leave to cool then stir in the prawns, rocket and/or mizuna. Make sure that everything is well-dressed. If serving much later, add the prawns and greens just before you serve.
