    Spicy fattoush salad

    Perfect for summer. The dish will develop and mature over a couple of hours, so it’s ideal for preparing ahead. Try adding feta or cooked shredded chicken for a more substantial meal

    • Cooking time: 3 minutes
    • Total time: 13 minutes

    Serves: 4

    Ingredients

    3 essential Waitrose Wholemeal Pittas
    3 Waitrose Classic Vine Tomatoes, cut into chunks
    ½ cucumber, deseeded, cut into 1cm slices
    1 red onion, chopped
    ½ x 28g pack Cooks’ Ingredients Coriander, roughly chopped
    2 large sprigs mint, leaves roughly torn
    2 tbsp extra virgin olive oil
    2 tsp Belazu Rose Harissa
    1 tsp Cooks’ Ingredients Simple Sumac
    Juice ½ lemon
    Romaine lettuce heart, leaves torn

     

    Method

    1. Rub the pittas with a little oil. Cook in a hot frying pan, or griddle for 2-3 minutes, turning once. Tear into bitesized pieces.

    2. Mix together the tomatoes, cucumber, onion, coriander, mint and pitta pieces in a large bowl.

    3. Whisk the oil, harissa, sumac and lemon juice together. Season and toss into the salad.

    4. Place the Romaine leaves on a platter and top with the fattoush salad to serve.
