Spicy kiwi & red pepper ketchup

Makes: 300 Serves: 6
2 Waitrose 1 Perfectly Ripe Golden Kiwi, peeled and halved
1 small red onion, quartered
1 red pepper, quartered and deseeded
1 red chilli, halved and deseeded
¼ x 28g pack coriander
Juice of 1 lime
1 tsp Cooks’ Ingredients Chipotle Paste
1. Warm a large, dry, non-stick frying pan or griddle over a medium heat. Cook the kiwis, red onion, pepper and chilli for 5 minutes, turning often, then remove the kiwi and continue cooking the rest for 10 minutes more until lightly charred.
2. Place the onion mixture and the kiwi into a food processor with the coriander, lime juice and chipotle. Blitz until smooth, then season. Makes a delicious dip with potato wedges, chips, sausages or chicken mini fillets.
