    Spicy Chicken Quinoa

    • Gluten Free

    • Cooking time: 15 minutes
    • Total time: 25 minutes 25 minutes

    Serves: 4


    • 6 Waitrose Free Range Chicken Thigh Fillets, trimmed and cut into 2.5cm pieces
    • 2 tsp Bart Cajun Spice Mix
    • 200g quinoa
    • 600ml chicken stock
    • 2 tbsp Waitrose Spicy Onion And Garlic Relish
    • 20g pack coriander, roughly chopped
    • 2 tsp olive oil


    1. Put the chicken pieces and Cajun seasoning in a bowl and mix together. Cover and refrigerate for 10 minutes.
    2. Cook the quinoa in the chicken stock, according to pack instructions, for about 10-15 minutes or until tender. Stir in the relish and coriander. Season to taste.
    3. Meanwhile, pan-fry the chicken in the oil for 5-6 minutes, until lightly browned and thoroughly cooked. Spoon the quinoa onto a large plate and fork the cooked chicken pieces over to serve, sprinkled with chopped flat-leaf parsley.
