    Spicy Cornbread

    Ready in 30 minutes.

    Makes: 9 pieces


    • 180g plain flour
    • 2 eggs
    • 460 ml whole milk
    • 100 g butter
    • 70 g chopped chorizo
    • 6 salad onions, chopped
    • 1 tsp salt
    • 2 tsp chopped jalapeno
    • 1 tbsp baking powder
    • 180 g fine cornmeal


    1. Preheat the oven to 200C/ gas 6.
    2. Butter a brownie tin; dust with flour. Whisk 180g fine cornmeal, 180g plain flour, 1 tbsp baking powder, 2 tsp chopped jalapeno and 1 tsp salt. Stir in 6 chopped salad onions and 70g chopped chorizo.
    3. Melt 100g butter; cool. Whisk with 460ml whole milk and 2 eggs.
    4. Mix all the ingredients; put in the tin. Bake for 25 minutes.
