    Spicy Squash Pizza with Goat's Cheese and Rosemary

    Sweet roasted squash and tangy goat's cheese on ready-made garlic pizza bread are a wonderful contrast of flavours in this easy vegetarian supper.

    • Preparation time: 10 minutes
    • Cooking time: 40 minutes
    • Total time: 50 minutes 50 minutes

    1 small essential Waitrose butternut squash
    2 tbsp essential Waitrose olive oil
    ½ tsp Tabasco Sauce, or to taste
    1½ tsp fresh rosemary
    250g pack Waitrose Sunblush Tomato & Garlic Pizza Bread
    100g essential Waitrose French Soft Goat's Cheese


    1. Preheat the oven to 220°C, gas mark 7. Peel the squash and cut in half. Remove the seeds with a spoon and discard, then cut the flesh into 1-2cm cubes.
    2. Place the squash in a roasting tin and mix with the olive oil, Tabasco, half the rosemary, and seasoning. Coat well. Bake for 30 minutes, stirring once, until the squash is soft and tender.
    3. Bake the pizza bread directly on an oven rack for 5-7 minutes, then preheat the grill to high. Top the pizza with the cooked squash, then crumble the goat's cheese over, followed by the remaining rosemary.
    4. Place the pizza under the hot grill for 1-2 minutes, or until the cheese begins to bubble and brown slightly. Serve hot in slices, with dressed salad leaves.

    Cook's tips

    When cooking the pizza, place a baking tray on the rack below to catch any bits. Make the squash mixture in advance, cover and set aside in the fridge until ready to make the pizza.
