    Spicy Thai Noodles with Honduran King Prawns

    This fragrant, spicy dish uses our fresh Thai curry kit, which contains all the essentials: galangal, chillies, shallots, garlic, lemon grass, coriander and Thai basil.

    • 1 Waitrose Thai Curry Kit (from the fruit and vegetable section)
    • 400ml can Bart Spices Coconut Milk
    • 1 tbsp groundnut or sunflower oil
    • ½ tsp ground cumin
    • ½ tsp ground coriander
    • 2 tsp Bart Spices Thai Fish Sauce
    • 75g green beans, halved (trimmed if preferred)
    • ½ x 250g pack Waitrose Medium Egg Noodles
    • 150g freshly cooked Honduran king prawns


    1. Prepare the curry kit ingredients: trim the ends from the lemon grass and chop; peel and roughly chop the shallots, garlic and galangal; deseed the chillies; zest the lime. Place in a food processor with half the fresh coriander and blend until finely chopped. Add 4 tbsp of the coconut milk and pulse to form a paste. (You may need to stir the paste occasionally.)
    2. Heat the oil in a medium pan and add the dry spices. Cook for 30 seconds, then stir in the fresh curry paste and cook over a gentle heat for 2-3 minutes. Stir in the remaining coconut milk, the fish sauce and green beans, then cover and simmer for 6-7 minutes, or until the beans are just tender.
    3. Meanwhile, cook the noodles according to the pack instructions, drain and return to the pan to keep warm. Juice the lime and add to the coconut sauce. Tear and stir in the Thai basil. Stir in the noodles and prawns, heat through gently then spoon into bowls. Garnish with the remaining fresh coriander and serve immediately.

    Cook's tips

    To prepare the chillies, wear disposable gloves (available from Waitrose), as this prevents the fiery oils getting onto your skin.
