This fragrant, spicy dish uses our fresh Thai curry kit, which contains all the essentials: galangal, chillies, shallots, garlic, lemon grass, coriander and Thai basil.
To prepare the chillies, wear disposable gloves (available from Waitrose), as this prevents the fiery oils getting onto your skin.
