    Spinach, bacon and avocado salad

    250g pack essential Waitrose Cherry Tomatoes
    2 tbsp olive oil
    200g pack essential Waitrose Smoked British Bacon Lardons
    Juice of 1 essential Waitrose Lemon
    1 tbsp essential Waitrose
    Pure Clear Honey
    175g essential Waitrose Spinach
    1 essential Waitrose Avocado, sliced


    1. Preheat the oven to 200ºC, gas mark 6. Place the tomatoes and 1 tbsp oil in a small roasting tin, season and roast for 15 minutes.

    2. Meanwhile, heat the remaining oil in a frying pan and fry the lardons for 5 minutes until crispy. Add the lemon juice and honey to the pan. Toss into the spinach with the hot tomatoes and transfer to 2 serving bowls, top with the sliced avocado.
