    Steak Sandwiches with Lemon and Anchovy Butter

    Intensely salty anchovies work really well as a seasoning for juicy steak. Be warned, though: this is messy, chin-drizzling food and is probably best not eaten in the company of anyone you are trying to impress.

    • 75g butter, softened
    • 4 anchovies, finely chopped
    • 1 lemon, finely grated zest
    • 2 sirloin steaks
    • 1 tbsp olive oil
    • 2 tomatoes, sliced
    • 1 baguette, cut into 4
    • 25g roquette


    1. Place the butter with the anchovies, lemon zest and some black pepper in a bowl and beat until combined. Set aside. Place a griddle over a high heat and brush the steaks with olive oil; season well. Cook the steaks for 2–3 minutes each side until medium. Take off the heat and leave to rest for 3–4 minutes. Cut open the bread and warm the inside on the griddle. Pile roquette and tomatoes inside. Spread with the butter. Slice the steak into strips and place on top. Cut off two thick slices of butter and melt on the steak. Close the baguette and eat while warm.
