    Strawberry and Raspberry Fool

    Serves: 6


    • 710ml double cream
    • 1kg strawberries
    • 700g raspberries
    • 2 tablespoons orange flower water
    • 200g caster sugar, or to taste


    1. In a saucepan, simmer the cream gently until it has thickened and reduced by one third. Set aside.
    2. Wash and hull the strawberries. Process with the raspberries in a food processor, then sieve into a bowl. Whisk in the cool cream, then season to taste with the orange flower water and sugar. Cover and chill.
    3. Cool your Thermos flask with iced water. Dry and pour in the fool. Serve in picnic cups.
