    Strawberry Gazpacho

    You can vary the ingredients according to what looks best. For example, try adding peaches, cherries, currants or even melon.

    Serves: 6


    • 1.2kg ripe strawberries
    • 85g caster sugar or to taste
    • 100ml good pudding wine
    • 3 large passion fruit
    • 2 ripe nectarines, stoned and finely diced
    • 250g raspberries
    • 6 mint sprigs


    1. Wash and hull the strawberries. Set aside 200g and purée the remaining fruit with the sugar. Strain through a fine sieve and mix in the wine. Scrape the juicy passion fruit seeds into the strawberry purée. You may need to gently loosen them with your fingers so that they float through the soup. Finely dice the remaining strawberries and mix into the strawberry purée with the nectarines and raspberries. Chill covered until needed.
    2. Serve ladled into soup bowls, garnished with some mint leaves.
