    Sweet and Sour Pork Ribs

    Serves: 4


    • 1 tbsp sesame oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, crushed
    • 2cm knob fresh ginger, peeled and grated
    • ½ tsp English mustard powder
    • ½ tsp ground black pepper
    • ½ tsp chilli powder
    • ½ tsp ground cumin
    • ½ tsp ground coriander
    • ½ tsp dried rosemary
    • 3 tbsp tomato purée
    • 1 small orange, half juiced and all zest grated
    • 1½ tbsp runny honey
    • 1½ tbsp dry sherry
    • 2 tbsp balsamic vinegar
    • 4 tbsp plum sauce
    • 1kg pork spare ribs


    1. Preheat the oven to 190°C/gas mark 5. Heat the oil in a saucepan and fry the onion and garlic for a few minutes until soft. Add all the herbs and spices and cook briefly. Add the remaining ingredients, except the ribs, stir well, and simmer for a minute. Put the ribs in a roasting tin (one in which they fit in one layer, without much space around them). Pour on the sauce and coat the ribs.
    2. Cover with foil and bake for 45 minutes, basting 3 times and turning the ribs once. Remove the foil for the last 10 minutes. Serve with potato wedges.
