    Sweet and Sour Shallots

    Caramelized and sticky, very tasty onions.

    Serves: 8


    • 1 kg brown shallots, peeled and left whole
    • 3 tbsp Cooks' Ingredients Sherry Vinegar
    • 4 tbsp light muscovado sugar
    • 1 tsp cumin seeds
    • 1 tsp chilli flakes
    • Finely grated zest and juice of 2 oranges


    1. Preheat the oven to 150°C, gas mark 2. Place the shallots in a deep ovenproof frying pan, or heatproof roasting tin, and pour the sherry vinegar over them. Sprinkle with the sugar, cumin seeds and chilli flakes and gently heat on the hob until the sugar has dissolved.
    2. Pour the orange juice over the shallots, add the zest and season. Transfer to the oven and cook for about 50 minutes until the onions are tender, golden and have a sticky caramelized glaze, and a small amount of sauce.

    Cook's tips

    To save time peeling the shallots, trim the top and tail of each, and place in a heatproof bowl. Cover with boiling water for 1 minute, then drain and cover with cold water. They should now pop out of their skins easily.
