    Sweet onion and stilton toad in the hole

    Rich and tangy, Stilton adds flavour to an everyday favourite.

    Serves: 4


    • plain flour for yorkshire pudding batter
    • eggs for yorkshire pudding batter
    • 100g stilton, crumbled
    • 2 onions, finely sliced
    • 8 pork sausages


    1. Preheat the oven to 220C, gas mark 7. In a large frying pan, brown 8 pork sausages in ½ tbsp oil.
    2. Set them aside. In the same pan, cook 2 finely sliced onions in 15g butter until very soft. Season. Turn up the heat and add 1 tsp soft dark brown sugar. Quickly caramelise the onions, stirring all the time.
    3. Make a yorkshire pudding batter and heat 1 tbsp oil in a large roasting tin, or in individual tins, until it’s almost smoking. Add the sausages and onions, then pour the batter around and sprinkle with 100g crumbled stilton.
    4. Cook in the oven for 35 minutes, until the batter is risen and dark golden brown.
