    Sweet Potato Purée

    This quick and easy dessert recipe demonstrates the versatility of sweet potatoes.

    Serves: 4


    • 2 large sweet potatoes, peeled and diced
    • 4 tbsp double cream
    • 1 tbsp honey
    • ½ tsp cinnamon


    1. Cook the sweet potatoes in a saucepan of water for 8-10 minutes until tender. Drain then mash to a smooth purée with a potato masher or an electric whisk.
    2. Add all the remaining ingredients and combine well. Place in 4 small bowls, garnish with toasted almonds or dried coconut flakes, and serve immediately with pieces of freshly cut fruit such as pineapple, mango, lychees and passion fruit.

    Not suitable for freezing.

    For a savoury version, add crushed garlic, finely chopped fresh coriander and a fresh red chilli, deseeded and finely minced, to the sweet potato purée. Serve as an alternative to mashed potato.
